Gluten Free: Cinnamon Raisin Bread

WARNING: Do NOT feed raisins or grapes to dogs!

Measuring Tools

1 cup

1 tablespoon

1 teaspoon

Dry ingredients

3.3 cups of flour (see below for formula)

2 tsp baking powder

2 tsp baking soda

1 tsp salt

2 tbsp psyllium seed husks (e.g. Konsyl original formula psyllium fiber)

3 tbsp ground cinnamon

2 cups raisins (e.g. Sunmaid golden raisins) … substitute 2 granny smith apples, peeled and cubed if you love your dog

Wet Ingredients

2 cup milk

2 eggs

1 tsp apple cider vinegar

1/4 cup olive oil

3/4 cup molasses (e.g. Grandma’s molasses)

Yeast (e.g. Fleishmann’s original active dry yeast) 1 packet

Directions (bread machine)

I use a Zojirushi BB-PAC20, which has a gluten free cycle.

Mix wet ingredients into the bottom of the machine.

Mix dry ingredients in a bowl and pour over the wet ingredients.

Scoop a small hollow into the center of the dry ingredients and pour the yeast.  The hollow is abouta the size of a quarter.

Turn on bread machine and wait until complete.  Allow to rest for a bit to allow moisture to escape as loaf cools.
